None of them really require grinding in the main story (except maybe the first game), it's optional. It doesn't take very long to grind yourself to unstoppable status if you wish to do so.
Only postgame requires grinding, but a lot of people find it really fun. You might enjoy it a lot because of the exponential growth of all the numbers, and the ease of doing it through training maps.

The character designers are Amaduyu and Mitsumi Misato. I'm not exactly sure who drew who, though I know Misato drew Kokopo.

They have a new doujin out and Misato released an artbook if you are interested.
