On average, thousands of people die in car crashes daily. Saying that thousands of people get spirited away to Gensokyo on a daily basis is just silly. The actual number is probably nowhere near that, because youkai don't really need to eat humans to survive. What many of them do need is human emotions and belief.
Plus, only some of the outsiders probably die. Some either get sent back or end up settling in the village.
