what was recording is frequencies of something I forgot the name that is not sound.
Since sound is frenqucies this can be easily converted to sound.
THEN after it was arranged.

check x-plane for comercial plane
for military planes check DCS series, they are ultra realistic and have just one flyiable plane to each game, people say they are more realistic than military training ones, because after some amount of time, military guys train with real planes.

Then talking about realistic physics and space, there is space combat game (the name of the game is space combat) the game is made by creator of x-plane and follow. Flying this thing is difficult, because how stuff works on space newtonian laws. You can battle here too with some ships. There is a cockpit but is not too complex
