for military planes check DCS series, they are ultra realistic and have just one flyiable plane to each game, people say they are more realistic than military training ones, because after some amount of time, military guys train with real planes.
Then talking about realistic physics and space, there is space combat game (the name of the game is space combat) the game is made by creator of x-plane and follow. Flying this thing is difficult, because how stuff works on space newtonian laws. You can battle here too with some ships. There is a cockpit but is not too complex
