A SUM of 3 things i theorize that are interconnected and build upon each other:
1. Because we are used to always hiding from the Sun when it's in full view because we go blind from looking into it, but we have an awe over it, so the time when we can actually see it in full splendor (sunset and sunrise) satisfies our curiosity.
2. Because the sunset and sunrise that we are able to observe and enjoy is very short lived, a very short period in a day. It's like when you eat ONE candybar desert that you love every day, and only one. No matter how many days you keep eating, it never gets old or tiresome because of the quantity and time period between each candy just building upon one-another.
3. Because the colors are, much like the color green (representative of nature), soothing to the human eye. The orange/dark orange tinge with clouds gives that warm feeling, relaxes the eyes, and the texture in the sky occupies your senses and doesn't bore you once you see it. It helps that most of the day is blue or gray, and it's the rare time the sky is in "unnatural color". Maybe there's some embryonic influence to why we like the color of the sky in sunset/sunrise that overshadows the instinctual fear of fire (red/orange being representative).
