You don't. 99% of pagan beliefs got wiped out when Christianity came in and destroyed any written works, or over time wiped out any oral traditions. This is why pagan shit today is just new age crap. People just got an interest in it and took the counterculture ideals of the time (60s and 70s) and tried to remake paganism leading to modern druids, wiccans, etc. And we know old paganism wasn't that pussy shit given how they lived.
Second, those gods didn't care about Europe or European people exclusively anyway. They were like most (barring Judaism, the old Canaanite religion, and a few others) religions and the messages applied to everybody, not a particular continent or people.
That would be the god of Christ. The others all failed. It is easy to say the Jesus is a dumb religion for sand people, but it once united and protected the european people for a very long time.

Because of book burnings and disinformation done long ago, most of what we know about the old religions are only half truths and straight up lies. It's pretty much on the individual to figure out what they believe in and what they believe to be bullshit because of this. Experiment with different forms of worship and piece it together for yourself.
A good god, at least by my opinion, appreciates the kind of man more inclined to pave paths than to follow them and the appreciation of a god often leads to their favor and blessings. It's virtually impossible to say which gods truly represent which virtues, but if you were to examine yourself and put high emphasis on expressing the virtues valuable to you in your day to day living and ceremonies meant to praise deities, there might be a better chance of catching the interest of a relevant god. How you draw the right kind of attention is pretty much up in the air from my studies.
I'm personally more inclined to alchemy than to worship, but through my studies and practice have made a reasonably comfortable and possibly blessed life. I don't know that something grand and mysterious has been looking out for me, but it does feel so at times. The way I see it, most people never meet anything paranormal and most of those that claim to do so while hallucinating or in an otherwise delirious state. I don't know that gods are real or that if they are they would care for the praise of mortal's. Some people do definitely seem a little luckier than others, though.
