I think I got it but whoever wrote it can't spell for shit. There's a misspelling and a typo in the first sentence. Fortunately I grew up doing cryptograms.

Also encrypting is scrambling. I think what you want is to decrypt it.

I also figured out "everything" before I just done this by looking at GAGIDYTSMO and just sort of guessing that E_E_________ was the word everything.

This is a well-known technique for countering frequency analysis.

This was also my answer, but I did it by hand. I knew S had to be I or A, then by looking at all the 2 and 3 letter words I narrowed down the list of possible vowels and a few consonants using the vowels I had. I got a short list of possible letters that Y, M, and C could be then simply tried them out in different combinations with the 2 and 3 letter words til I got M = N and that made everything fall into place almost instantly.
