you can always check the hash to make sure it's legit, but I haven't had a problem with that

Basically you want a legitimate install but with a backup image so you only have to do s simple restore of the image instead of reinstallation and reconfiguration of windows.
Get a legitimate WIndows 7 iso and burn it, then back up after you have it all set up with all your favorite programs and stuff so you can always just restore to that same exact starting poing.

I was about to suggest this, the media creation tool is your best choice.
But if your product key is OEM you are fucked, can't use that.
