I want to gift to my mom a new laptop.
She likes to browse with many tabs open, Microsoft Office, watch videos on youtube, watch videos (offline) 1080p, I want the apps to open quickly. Windows 10 compatible - she isn't used to windows 10 but I will make it look like Windows 7.

So you want a laptop with an SSD. Which means it'll be so modern it'll easily handle Win10 anyway (and will probably come bundled with it).

I'd love to recommend a 16:10 display (eg 1920x1200 instead of 1920x1080). The extra vertical space makes office work so much more convenient on the notoriously small laptop screens. Except pretty much only Apple manufactures them, everyone else does just 16:9 :-/
Well, at least take a non-glare display. Glare is garbage for office work.
Is she typing a lot in MS Office? If so I recommend Lenovo as the brand. Their keyboards are head and shoulders above everyone elses. Honestly like night and day, so much more comfortable!
Does she use Excel? If she handles a lot of numbers, she'll want a dedicated numblock on the keyboard, which is a pretty convenient way to compile a shortlist, since not many have them.

Downloaded or does she need an optical drive? Otherwise it's useless these days.
1080p video is honestly the only thing that requires any sort of performance on higher bitrates. Even harder if she wants the audio not to sound like it comes out of a tin can, since most business laptops have awful onboard audio.

You could consider also some cheapo external display that can be rotated 90 deg for full page view. Doesn't need to be any gamer level display, but those who read and write stuff, or check out recipes and instructions from pdfs will genuinely appreciate it. My mom has one in the kitchen and my dad has one in his workshop. They just plug them in their laptops.

My dad has one of those in his garage as well. He doesn't need to use reading glasses with it because the font size can be 20+ and he can see the text from six feet away while working with his mopars.
