The beginning of Dragon Age as a mage is like that. Only the first ~two hours though.

Gothic II also has a fun magic apprentice part. You have to do weird shit like blackmail people and bring a sheep to the mages to get accepted. Then you have to survive the teaching, the monsters, the drug dealing etc. probably the most fun "larning magic" experience I had, also only a few hours though.
