There's this game called 'Ori and the Blind Forest' that I think fits your criteria.

There's also a game called Astroneer which is semi-low poly but not extensively low. There's also no story but it's a really beautiful and colorful game that I definitely think you should check out.

Bastion is old but gold
its spiritual successor, Transistor, probably has too much text and faff to its combat for your taste, but I didn't mind it personally
also in the category of games you've probably already played, the Bioshock series was remastered like last year

Thanks, you've got the idea. Fast-paced gameplay and beautiful worlds, immersive worlds is what I'm looking for. Haven't played Hollow Knight and Owlboy from the ones you mentioned so I think I'll go with the first one.
