I'm looking for pc games that have not only great art direction but also high quality graphics, so preferably something newer (no pixel art or low polygon models). Those are the main requirements, preferably not too long and immersive gameplay (by which I mean no clunky mechanics or just scrolling through loads of text) as well.

There's this game called 'Ori and the Blind Forest' that I think fits your criteria.
There's also a game called Astroneer which is semi-low poly but not extensively low. There's also no story but it's a really beautiful and colorful game that I definitely think you should check out.

Bastion is old but gold
its spiritual successor, Transistor, probably has too much text and faff to its combat for your taste, but I didn't mind it personally
also in the category of games you've probably already played, the Bioshock series was remastered like last year
