The thing is that a series actually has to have fansubs though. So something that's unpopular usually only has Crunchyroll subbing it and thus only HorribleSubs. But subs for stuff like Fate/Apocrypha or Kakegurui can be found on those two sites.

And for whenever you find out how the internet works or if you have friends on these sites, try and get on one of these private trackers:

BakaBT
AnimeBytes

AnimeBytes is the best of these three, so if anything aim for that.

By the way, to explain why Fate and Kakegurui have fansubs, it's because they're both licensed by Netflix and Netflix doesn't release an anime until it's finished. But the anime still airs in Japan, so people sub it because fans are impatient.
