OpenTTD is pretty entertaining, you build roads and make commerce, there is no limit.

OpenCRT is similar, but you control a theme park https://openrct2.org/

Tiny and Big: Grandpa's Leftovers is a linear physics 3D puzzle platformer, but you have a lot of freedom in how you carve up the territory. It has stressful moments though.
