Mononoke (each story takes 2~3 episodes)

Trigun (very similar to SC three ppl join mc looking for answers it has lots of action and good pace)

Samurai X - tv series (first 65 ep were great very similar to champloo from 65 to 100 they're mostly fillers)

Black Lagoon (besides Kekkai Sensen is probably the closest one to Cowboy Bebop)

Gintama (combination of both detective/samurai/futuristic/3 person squad) sometimes it has multiple ep arcs but usually every ep is a different story, the beginning is a little slow but it has some amazing eps definitely worth watching imho.
