Is anyone able to change the line "automotive engineering" line to "Mechanical Fitting" while not messing up the grey background?

Yeah I mean we could find out the font and try to simulate the weathering, or cut the correct letters from what we have (H is also missing) but it would take me more than an hour and I would hate myself doing it, so I really don't want to. Sorry anon.

Just use the clone tool to copy the background onto the new lettering with transparency set to like 20% to simulate the weathering.

At first I was going to go the method of cutting out the letters but when I realised that there was no L (I had a H in another part of the form) I knew it would take some kind of weathering effect to make it work.
It was for a job application, and although I have the correct qualifications I didn't have 2 weeks or so to wait for the replacement cert to arrive in the mail that shows mechanical fitting.

Better just say you completed it and are waiting for the document to arrive in the mail than attempt to fake it and someone notice. Even if you have the qualification forging a document looks incredibly bad.
