I tried, learning all those Kanji and then hiraganas and kataganas I pretty much gave up, so I decided to learn Russian
All the romance languages are going to be easier to learn than any Cyrillic or Asian derivatives if English is your native tongue.
Start there if you can't be bothered to stick to one for long enough.

Romantic languages are anything derived primarily from Latin: French, Italian, Spanish and most anything else Western European.
The next family over is Germanic and English is kind a blend of these two but it also includes all the scandinavian languages and German.
Moving further east you have the slavic (cyrillic) languages which are a pretty big jump from germanic in senetence structure and then even further east is asian after that.
You don't have to follow them geographically, it's kind of a just a guide. I know english and some norwegian but all the scandi languages are somewhat mutually intelligible so it's easy to jump between them.
