Berserk first and foremost.
Second is Souten Kouro if you like dynasty warriors or the warring kingdoms of China
Third is probably a tie between JoJo and Trigun though neither is particularly bloody, just really good stories and fighting.
Last would be highschool of the dead but that's only cause it's bloody. Be warned though that it's pretty damn ecchi.
