One of the technical writer's for the show said in the last season when it shows them stealing the Defiant from the future in the alternate universe episode there was supposed to be a line of dialogue.
The lines went something like -
Someone: "Why do these monitors look so backwards?"
Tripp: "These monitors are shake proof, blast resistant. Hell, I tried hitting one with a low level phaser blast and it was fine. Panel blew all to hell, but I guess the engineers just haven't perfected that yet in 100 years."
Basically, it was supposed to indicate the technology was designed to be more sturdy, and functionality overcame aesthetic appeal for a time.
