Why is Thief 2 so fucking good? I don't usually play retro games but holy fuck this is amazing.

Unfortunately, players these days don't have the patience required for a game like Thief 2. That's why Thief 3/4 didn't do so well, and tried to make the whole thing faster. This is why the Dishonoured series has done well. The stealth portions were sped up, the action portions were thrown in as much as possible.

You don't necessarily have to slash through zombies; you can just hide and run away from them. Or use your superior wit to ambush them and dispatch them 1v1.
Both games are great, Thief 3 is good too, straight-up comparisons are pretty pointless as 1-2 are must plays and Thief 3 is still competent.

Highly, highly doubt it. These game were made by MIT graduates. The people who make indie games now barely learn Unity before shitting out a game. They don't know how to make competent products, just throwing niche genres on a wall and hoping it'll stick (ex. cyberpunk + rpg, platformer + stealth). Their games are shallow and flawed in game design and it shows. That being said I still enjoy some indie games.
