get a dazzle or any other composite to USB capture devices on amazon for like $25-$30 I personally use a Startech USB 3 Capcard and av/splitters to record/stream NES

All those solutions normally use composite.
COMPOSITE IS NOT DECENT!

S-Video is the lowest form of "decent".

Find a capture solution that captures S-Video. But find one that recognises 240p as 240p.
Not a piece of crap capture equipment that recognises 240p as 480i and ruins the capture by needlessly de-interlacing.

My setup is pretty stupid and retarded. If you genuinely want "top quality" the best option, bar none is emulation.

What I use:
>SD console hooked up to AV splitter
>AV splitter goes to CRT TV and then to a cheaper HDMI upscaler
>HDMI upscaler goes to Elgato HD60 capturecard
>Scale the expanded 1080p picture back down to appropriate with OBStudio

Dazzles are garbage. The colours are wrong, and the static they introduce looks really terrible. My solution isn't great, but I refuse to use emulators since I wanna play my carts.

But seriously, use an emulator if you can.

I just got a GV-USB2 and it works pretty great with S-video. Only caveat is that you need to get a AV distribution amp to split the signal (like $15) and do some post editing.

The thing does capture 60 fps 240p at 720x480 essentially line doubled when setup right. I haven't streamed with it, but for $33 the quality is decent.

I then upscale that resolution the best you can to 1280 x 720 so youtube will show it as 60 fps as youtube 480p isn't 60 fps and looks like shit. It isn't pixel perfect, but it isn't stretched as I pad the sides.

Once you get into RGB it gets a lot more expensive. I often see people route everything through a framemeister then to a Elgato Capture card. Another option is to use a XCAPTURE-1/Startech and do a lot more processing. One of these days I'll upgrade to one of those as I plan to upgrade to RGB again.

VHS wasn't even a good option when people used VHS. Emulation capture will almost always give you the best results. Video capture cards can introduce delay while you're playing, so this is only a good option if emulators are bad or don't exist for the console you want to capture.

I use an Epiphan DVI2PCIe capture card.
I bought it on ebay for $75.

It does RGB, Component, VGA, dvi, hdmi, and any resolution or framerate you can type up to 1440p@60hz (it can do higher frame rates at lower resolutions). You just need a cable that converts them to DVI (these are available everywhere for cheap)

Here's a test capture I did of Odin Sphere on PS3.

It can do Composite and Svideo, but you have to make a custom plug to go on the 2x5 pin header on the top right of the video card (JP1)

The pinout for the top row (pins 1-5) is all ground.
bottom row is:
Pin 6 - Composite Video/ Svideo Luminance (Y)
Pin 7 - Svideo Chrominance (UV)
Pin 8 - Microphone In
Pin 9 - Audio Left In
Pin 10 - Audio Right In

I just used a serial port cable to get it out and build a DB9 to Svideo/Composite/Audio breakout cable.

I have a StarTech USB3HDCAP. Definitely not the cheapest way to record video, but it's a very nice card, I recommend it if you want to capture analog RGB. It'll accept just about anything you care to throw at it up to 1080p60, with no stuttering problems for off-spec refresh rates.

I also have a Mememeister because I'm a heathen who plays on an LCD TV. I made a quick recording of just dicking around in Super Metroid to show what it looks like:

(The horizontal smearing on some colors is because my SNES is an older 3-chip model with the low-pass filter. I actually have an SNS-101 as well, but I haven't gotten around to modding it for RGB yet.)

The basic idea though is to find some piece of old professional equipment getting offloaded on ebay for pennies and use that.

There are some newer epiphan HDMI capture cards on ebay right now for $200, they'll be half that in a year.
