Never played the original, but I love PW64.
It's both a relaxing game and a very challenging flight sim. Getting the gold medal in some missions (especially the hanglider) can take a lot of tries, but when you know what to do, it's actually possible, it's a well designed sim/arcade hybrid.
As a kid I just enjoyed flying around, discovering places and goofing around, the missions were too hard for me. As an adult I actually got into the scoring system and the missions, and completed it (or so I think, I believe I still need a gold medal in one of the cannon extras)
I about had anxiety attacks trying to land that damn rocket belt on the moving pads. The final helicopter mission was stressful too. It's a miracle I ever beat that game.

I don't know who told you that and about which game exactly but the SNES version has a steap learning curve. The BGM is pretty good but even that I would hardly call relaxing.
Regardless, it's not hard to finish the first airplane segment once you know the controls and got gud. It's only where you get tol the third or fourth area where things get really challenging.

Seconding this about the N64 version. The visuals seem more outdated to me but it's got a ton of variety and the scoring system is excellent for replay value.Haven't played the 3DS version yet but would love to as I loved every game before it.

I regularly score 100 on that level. The guide dots are REALLY useful.
Never press left or right once you've lined them up.
Hit every one.
Cut your speed before you hit the ground, but not so early that you stall.
Practice for 20 years, you'll get it.
Hitting the moving targets with the jetpack/parachute. Now that's hard!

I tried it recently and it's nice but it feels like a tech demo. Graphics are nice and the 3D effect is cool but the game isn't very exciting. I think I just don't like PilotWings games though. I had PW64 as a kid and didn't really like it.

There was a dog fighting game I used to play back on Windows 98, something about the Red Baron, and you just flew a plane around and shot down other planes out of the sky. It was pretty badass.
