I think the only one I played and beat before is Conquests of the Longbow, which I enjoyed. I also beat Shadowgate, but I don't think that's Sierra.
Any of their point and click adventure games like day of the tentacle or the monkey island games. If you need help with emulating anything check the sticky out, my dude.

These games were made by Lucasarts, NOT Sierra.
Sierra published a great game in 2000, but it is not an adventure game.

Try Torin's Passage. It has a childish aesthetic but it's a very solid game with a nice, simple story.

I think that Phantasmagoria is more well-liked because it's gorier (which quickly turns into cheese), and it is much, much easier than a typical Sierra adventure game.
Which is fine by me! Some of those older KQ/SQ solutions are so out there that I feel almost compelled to have a FAQ on hand. Phantasmagoria has a hint button right on the interface itself to help you if you get stuck. I assume this was in order to increase sales and marketability, and considering it was Sierra's best-selling game, i suppose it worked. Love that surreal and sometimes silly-looking castle the game takes place in.
GK2 is supposed to be a marked improvement over the Phantasmagoria engine, which is admittedly a bit bare bones. For one thing, the puzzles and animations are much improved, from what I hear. I've been meaning to give it a try.
