I think Full Throttle is post-apocalyptic.

War of the Dead series is Japanese exclusive, on more or less obscure (to the west) platforms and are balls hard post-apocalyptic Zelda 2 type games.

It's not all that heavy on the atmosphere but fatal run for Atari 7800 is basically post-apocalyptic pole position where you blow up the other cars. Not anything terribly special but it's fun.

There is Krush, Kill 'n' Destroy if you like RTS. It's kind neat
