What's the best way to capture video and audio from old systems like the Famicom and SF? Even Playstation and PS2. It seems like anything besides the 2 most recent hardware generations is very tricky to capture from.

It's quite easy, any USB analog capture card will work. You might need a bit of postprocessing (bob deinterlace) because the card might interpret the two fields as interlaced.
Though the real answer is to use an emulator.
put this in in line-in and record
Framemeister Mini + Decent HDMI Capture Card

USB3HDCAP. Takes composite, s video, RGB and component out of the box. A bit on the pricy side though.

That only works for audio.
It's probably easier to just emulate and then capture that, unless you're trying to capture from an N64.

Isn't there this trick about connecting a camera to the VCR and recording that way?

Some cameras do have video and audio inputs. No need for a VCR unless you want to use one as a splitter.

Get a capture card that accepts the signal the console outputs.
