Do you think NES themed retro games are still popular today and may be popular in the near future?
Sure, you got undertale and Shovel knight, but I wonder if people in the future will still enjoy a NES retro game.

Yes. Because they're not really NES themed, they're pixel art themed, and pixel art is appealing outside of it's NES and other video game related roots.
Also art is hard, and good art is very hard. If you have a low resolution it makes it much easier to have it look decent.
