I have never played any of these. It's Spooktober, so I figured now would be as good a time as ever to start.
Question is, which one should I start with? Help me out here, /vr/.

The best one is easily Symphony of the Night. But most of them pre-reboot (pre- Lords of Shadow) are excellent.
Start with IV. If it's too easy, move onto the NES games. If it's too hard, try out Rondo, Bloodlines, or Chronicles, which are even easier than Super IV.

Play the original NES game. If you're not into the stiffer controls, skip it and try out Rondo of Blood, Bloodlines, or IV. If you like the stiffer controls, move onto III (the Japanese release is somewhat easier and has more elaborate musical arrangement; go for that one) and then just move forward playing whatever.
Belmont's Revenge for the GB is easily overlooked but it's excellent and worth playing.
If none of the Classicvanias hold your interest, try Symphony of the Night anyway since it's so different.

Play the ones on the NES first, to have an experience of the classicvanias, then move onto Super Castlevania IV. SCIV controls differently from the NES trilogy and is pretty easy, but it's a great game. Then play Rondo Of Blood, because it's goddamn good. You can also try Bloodlines, it's an interesting game but not the best one imho. Next, play Symphony Of The Night. It's closer to Metroid, has a more fluid gameplay and RPG elements. Beautiful graphics amd music too. Then play the GBA ones in this order : Harmony Of Dissonance -> Circle Of The Moon -> Aria Of Sorrow. And don't pay attention to the shitposts and nitpicking in Castlevania threads, it's an awesome series with few bad games.

Depends on what you want. If you want RPG-like games, try SotN, AoS, HoD. If you enjoy the lack of control and "gitgud" stuff, try 1-4

Castlevania isn't a racing game series. It should be slow.
Anyway OP, start with the first one and play the rest in release order. Form your own opinions, don't really listen to people on /vr/ because opinions are literally black-white polarization bullshit.
x86 (aka Chronicles, though make sure you play "original" and not the super easy arrange mode if you go with the ps1 port) has absolutely amazing level design and is insane fun.
Brutal though. But one of those games that exemplifies "fun hard" instead of "frustrating hard". Always has me wanting to go one more run.
Bloodlines might actually be the best starting place if you want a title thats a bit easier. It's almost as good, a lot easier, and its fast and flashy as fuck with a killer debut ost from Michiru Yamane.
for just the 2-d action game start with super castlevania 4 on the snes. it's the easiest, has great controls and is an overall solid experience.
for super Metroid rpg elements try symphony of the night.

If you start with anything but 1, you'll not only make the wrong choice, but you'll potentially ruin the others for you. Starting with Rondo/SotN/any of the later games will make it a bit tougher to go back and play the others.

I always use the crosses. Rarely ever had trouble with him. In fact, how do you even stun lock him? I don't think there is holy water near him, which means you'd have to hold it for awhile, and even then he moves around a lot, so it seems like it'd be tough to do.
Play Castlevania IV. It perfectly envokes the atmosphere of the Hammer Horror and Universal movie classics.
If you want to play a Castlevania game this Halloween, THAT'S the one you should go for.

I'll take this as a regular CV thread and ask, has anyone had trouble on CV(1) with pressing up by mistake and using subweapons or climbing stairs without meaning to? I kept doing that and I'm not sure if it's me, the game or the controller being too loose. And does playing it through retroarch with shaders bring in significant input lag?
