They're all pretty fun. Sonic's Ultimate Genesis Collection is a great compilation. I only wish Revenge of Shinobi was on there, but that's okay since I own the original. Play them for yourself and form your own opinions! :)

Out of all of those, I find myself going back to Shinobi 3 the most.It's fairly easy, but it's just fun as shit to play. The surfing/horse levels alone make it worth playing.

I had fun with:
Beyond Oasis, it's like a zelda-light
Golden Axe 1-3 are good side-scrolling beat em ups, dwarf is overpowered in 2, stupid amount of reach.
Phantasy Star IV was my first real JRPG, still gives me warm fuzzy feelings, good times.
Shining Force series is solid.
Sonic Spinaball is the only pinball game I've ever really enjoyed.

I played GA3 to hell. Tons of moves, finally re-balanced after GA1–2: running jump attack doesn't deal the ridiculous damage, it's actually viable to do combos instead of just dash attacks, etc. The ability to grab enemies, block, etc. added means that it's finally on par with other beat 'em ups in terms of depth. 4 characters are more different this time, magic is mostly the same but it feels a bit more balanced to me.

Now where it goes ahead is IMO the level design and AI. Unlike SoR, the levels aren't flat, there are more pits and so on. And the AI is actually not very dumb. There are fewer enemies onscreen, but the way they attack is just much smarter, they don't feel like cannon fodder. Same can be said about bosses: they don't bullshit their way through, battling them is almost like playing a 2D fighting game. All in all, it's much more tactical if you will.

Add to this branching paths (more replay value), great graphics, and very interesting art style. Last but not least—it has amazing music, and I'm certain the tunes are much catchier than in any SoR game, despite them not being hip techno/dance stuff.

There are more than enough great games on there, though. It got me into Alien Storm.
