So I'm trying to get some good coop games for the PS1 but I'm really struggling to think of many as it has been a while. Already have Diablo, Crash Bash, Jedi Power Battles. Were there really just not many coop games for the system? Any suggestions?

That hell. I still remember trying to get 200% solo and everyone would just 3v1 me on those relic matches. 2v2 is much easier, you might have a good time.
Try getting team buddies, I haven't played it in years but I think it has a coop option.
Crash team racing, if you want a racing game it's really the best one on PS1.
If you have a modified PS1 you can burn an emulator on a CD and play NES games, there are tons of coop ones.
