well stretching the image looks like shit. The filter the emulator I use (VBA-M) has available don't really do anything to make it better.
I can play it at the original size but it's obviously too small then. So I was wondering that if on nowadays full hd or UHD displays, the game boy simply has too low resolution to be emulated decently on a high resolution display.

You can easily make the size of the screen as displayed on your monitor the same size as a GB screen. But making it bigger in any way is obviously going to stretch it. So I don't even understand what your problem is.

The real problem is that you just don't like how GB games look. NES' resolution ain't much bigger and people play that on big screens all the time.

Run it at a integer multiplier, if thats what you mean.
At 2x or 4x windowsizes there won't be any distortion.
