What are some good old fashion rpg games where I have to write maps and write down things. Kinda specific I know, but I want to try something a bit different.

I never took any notes or made maps for that.
I played the GBC version though.
Shining in the Darkness, Warriors of the Eternal Sun, Might and Magic 2.

I played the NES version and later in the game I found it easier to just write down maps to not get lost and die, couldn't afford to lose all that G.
I think the encounter rate wasn't as heavy on GBC/SFC versions.

SFC/GBC also give you an inventory bag with infinite space to carry around, so you wouldn't need to keep track of items left in storage.

I have no idea what sort of mental capacity you have. I didn't need to write down maps for any of these games and could still find my way around some of them today. Other people need to draw a new map each time they circle the goldfish bowl.
Dungeons & Dragons Order of the Griffon (Turbo Graphix 16)
You literally had to for some dungeons or you'd die. Some towns were just as confusing.
