They changed some details of the gameplay in the PSX port, which came out later, and the sequels are closer to that. Consider the PSX port more like DOA 1.5.

At a guess the character models are higher quality, you can see the entire arena ground, and it runs in hires. And it has pretty smooth polygons, almost zero jerking.
Or maybe the PSX version just looks wildly different from the arcade version.

saturn version is an arcade port of the original doa model 2 board.
ps1 version is a remake entirely and has the most content.
doa++ arcade is based on ps1 version and has the best gameplay.

PS1 version tried too hard to replicate Tekken in looks.
