How do you fix the most broken defensive type in the game without introducing a new type?
Removing the Poison immunity would be a reasonable nerf and also make Poison attacks more viable as coverage moves.
Remove fairies and Steel becomes what it used to be, just without ghost or dark resistance.

Just because it keeps dragons and fairies in check doesn't mean it isn't busted itself.
Why does a type need 400 resistances and an immunity? Slapping steel on almost any type makes it instantly better and a potential wall.

When Steel go introduced I thought Psychic would be super-effective against it because of the "bending spoons with your mind" shit. I mean there is even a Pokemon based on it.

Sure it's a really powerful defensive typing.... but...

Much like Fairy type's problem is that nothing learns Poison and Steel TM moves...
Steel's main splashable weakness moves are physical (fighting/earthquake)....
That being said, there's plenty of splashable 80+ BP special ground and fire moves to go around.
I'm not seeing the brokenness (unlike Fairy which could be solved if they let everything learn those poison and/or Steel TMs like how everything learns Earthquake).
