I ask you this however: is that STAB boost really worth it? Yes, Weavile will die to most neutral hits anyway, but the Ice type gives it four extra weaknesses, one being a 4x weakness. Would it not overall be better if it were pure Dark?

Hitting harder simply matters more for a frail Pokémon than taking hits. The only upside of a pure Dark type Weavile is losing the Stealth Rock weakness. The same applies to Mamoswine.

They work well because Ice is a great offensive typing and Dark / Ground are as well. Getting a priority Ice move was key to them being OU/UU in several gens

Really, any remotely offensive Ice type benefits from it.
Ice just suffers the same problem as Rock, where the typing is specced for offensive Pokemon, but it keeps getting stuck on slow, defensive Pokemon. Anything with a decent speed and offensive stat runs the type fine.

And M-Diancie and Nihilego. The latter kinda sucks in the current OU meta because of Dugtrio and the fact that everyone and their mother is over preparing for Diancie, but it's still one of the better Rock types.
