Ultra Beasts grow out of the environment from their respective Ultra Spaces. Kartana blooms from foliage, and Nihilego grows out of crystal corals.

Mystery files lore explained that US wormholes are each their own thing and there are many of them, which is why the Nihilego one was so small and had nothing but Nihilego(multiple).
By that logic, other US are the same small spaces designated for their respective UB (multiple of them), but as we know with the UB catching spree, some UBs are less in numbers than others, so maybe some have even smaller spaces (nihilego was one of the many-number UBs)

We know literally nothing about the way UBs are born and how they survive. The only thing we know is that Guzzlord eats stuff, and even then we don't know what he can and can't survive on.
