A good battle isn't determined only by the difficulty; it's the team, context, theme battle, difficulty and sometimes even the dialogue what determines a good, bad or mediocre battle.

I would say that the best ones are either Blue, Cynthia or Kukui (even though he's not a champion).

Her theme is great and had probably the most competent team out of any NPC , only Kukui managing to pull something similar. Face it, she, Steven and Blue are the best champions in any game. Iris came close however, I admit.

The appeal of it is it has several vastly different sections that encompass many different feelings instead of the generic "this is the music for the last battle" kind of tone.

Pokémon has consistently great, catchy music but it also tends to reuse parts of melodies in order to evoke a uniform sound across the games. Themes that correspond to each other often have parts that sound like the composer just switched notes around until it sounded slightly different.

Iris' theme is good simply because it is so different. It reminds me of Final Fantasy's final boss themes, especially VI's in that it's written to match the character rather than just "I am now fighting the last boss". Diantha and Kukui especially had the potential for incredibly unique themes but went with more traditional ones.
