What kinds of animals and cultural things would you hope to see used as inspiration for new pokémon in a South/Central American themed region?
Pińata Pokémon that's Grass/Fairy type.
Quetzalcoatl Pokémon with either a Dragon/Flying or Dragon/Water typing.
Chupacabra Pokémon that's a Normal/Poison type.

Aside from your pick related being really fucking scary there are tons of rad creatures of South American mythos than can make good pokemon. I think sableye is one of them mixed with an alien sighting but I could be wrong.

People are probably tired of tropical regions by now, but I can't help but imagine how awesome exploring a place like that could be.

Pokémon Sage actually has a pretty fucking good selection of Fakemon based on Southern US, Mexico and South America.
Off the top of my head I remember there being a Jackalope, a Chupacabara, and some Aztec looking ones, but when I was reading through them I found a lot inspired by specific animals in the region that I'd seen in documentaries before.

You don't take those illustrations as truth, do you? Those are based on the passages in the text, but they're up to interpretation. One hypothetical interpretation for Behemoth is a sauropod dinosaur, for example, as it describes its tail as stiff and strong like a tree. (which also kind of makes sense for Groudon too.) Read it for yourself and cross-reference the different language versions to see what you think may be the thing they are describing.
