How would you make a pokemon that gains the Bug type upon evolving? Obviously not counting Eevee of course.
I'd make a Normal/Poison generic mammal whose body is filled to the brim with parasites, but it doesn't mind. It has a regular Normal/Poison evolution, but also a branched one where it forms a symbiotic relationship with the parasites, and gains chitinous armor over all its body. Type becomes Normal/Bug. It evolves by leveling up past a certain level while knowing a bug type move.

Seems a bit arbitrary to me. We have plenty of bug larvae, but this one isn't for some reason?
Normal spider monkey that turns into a Normal/Bug spider gorrila.
A Ghost/Grass white bud that has a spider face turns into a Ghost/Bug strigoi with four floating hands and a spider web cape.

A fish tongue parasite: The first stage is a pure Water fish that has some tiny eggs inside its mouth. Then it evolves and the fish stays the same, but the eggs turn into a monstrous lobster thing that still lives inside the fish's mouth.

That would be great. I'm sure gf wouldn't want to mess with that though desu.
One thing you could do, though, is make the fish part look fake in the first stage and the "eggs" be kind of piloting it, sorta. It looks good in my head.
