Defense positive nature is uber recommended, and like you recognized by recommending a sassy nature there may come a time to run mixed offenses. The problem is deciding between sassy, relaxed, brave, quiet, modest, and adamant. Realisticly it would be nice to have one of each. And if you're re-setting for a positive nature for special attack you should look for it to have hp ground. Also what's the balltism of choice? I caught my sassy one in a moon ball and I have been trying to catch a adamant Celesteela in a heavy ball.

What you want is timid hp ice and timid hp ground. If you get the other game reward your self with a modet pair of the same hidden powers. However I know it seems sadistic, but believe me it won't take but a few hours over a few days. If that means you want to take a break or breaks for that matter i understand, but it will be worth it when you have the pokemon you want. I also recommend burning Xurkitree and throwing what ever ball match you'd like at it until you catch it, but beast balls are good matches too and are a pretty quick catch. Good luck soft resting it's worth it, from an anon who has soft reset for the 4 Xurkitree I described.

Ps. My modest hp ice Xurkitree is in a net ball. What is your favorite ball match for my favorite UB?

I'm currently new to breeding, and I know about how the power items move IVs down inheritance wise.

But my question is I have a fennekin with 3 perfect IVs now and I'm wondering if I should stop breeding them and wait to get a Destiny knot before I continue to breed more. Or is there a chance I can squeeze in another perfect IV on top of the 3 I have?

Just keep breeding with the Destiny knot until you have Pokemon in different egg groups with better and better ivs. Also if you have x or y friend safaris are a good place to pick up 2-4 iv dittos.

Adding to what the other anon said: You can SOS a 4 IV ditto. Just make sure your chain is at least 30, before catching the next ditto. It takes roughly an hour but definitely worth it to kickstart breeding for most egg groups. You might even want a second ditto for the two remaining IVs.
Also, yes, you should not breed without at least one destiny knot, one everstone and the oval charm, and optionally the shiny charm since it's so easy to get now and sometimes gives you a motivational boost.

Also, even if you don't want to SOS a ditto, you should have an SOS mon at the ready. It won't be long before you're looking for a Hidden Ability or a competitive item such as Light Clay. I use my Hold Back snorlax, but anything with false swipe and a ton of sitrus and leppa berries will work. You can catch a Worry Seed exeggute in exeggutor island, which will help with looking for a HA, and I had a random Poliwag with Thief lying around, to steal held items.

Shiny Charm stacks with absolutely everything. I've gotten a few shinies while SOSing for EV training and HA, and one shiny Mimikyu while breeding. It's worth it, even if you're not a shiny hunter, because shinies are cool regardless, and the motivational boost when you get lucky is nice.

Not sure if you were able to get your self a 20th anniversary Mew, but it's perfect for the job. Access to will o wisp and roost while being level 100 enables it to bulk hits from Xurkitree and allow it's status to continually ail our UB. False swipe and sleep will pretty much give Xurkitree the opportunity to set up beast boosts and sweep your team. Burn should be your ailment of choice even with out Mew. Thanks to the burn nerf this generation it gives you even more opportunities to through your ball of choice to try and catch it with. Good luck have fun, and know that no matter how miserable soft resting is, it will be very gratifying to have that hidden power of your choice.

I always go either Jolly or Timid on Mewtwo though. Birds are Timid for Moltres and Articuno and Modest for Zapdos (not competitve but I want a generic max sp.atk and speed build with static for overworld usage)

Get two 5-star Rare Kitchens in your Festival Plaza and it's a cinch.
Just power level at the E4 until your 'mon is at Lvl. 66, feed it two Rare Dinners and two Rare Buffets, then feed it two Rare Candies, and you're done.
