A liver Pokemon:
It would be just a big piece of uncooked beef liver with beady eyes like Ditto's. No mouth, no limbs, nothing, just a liver lying on the ground. It would feed on toxins and acids, so it would have an ability that's Water Absorb to Poison moves. Its lore would be that most people avoid catching it because they think it is ugly and disgusting.
Then it evolves into something beautiful stil organ-y, like a brown peacock with blue eyeballs on its tail. It would hypnotize people into thinking it is gorgeous and people would want to catch it, but it would act very rude and spit acid at whoever tries to catch it.
Livermon would be Ground-type, peacock evo would be Ground/Flying or Ground/Poison (with no wings).

Complete revision of the type chart.
Break everything into classes of three.
Elemental: Fire > Grass > Water
Mineral: Ice > Steel > Rock
Nature: Ground > Flying > Electric
Body: Psychic > Fighting > Poison
Spirit: Ghost > Bug > Dragon
Dark & Fairy are super effective to one another and Normal is neutral to everything, thus they don't get put into a class.
Elemental > Mineral > Nature > Body > Spirit
Every Pokemon has a class and a single type.
A Nature-Class mon will get a 1.2x boost in Ground, Flying, and Electric moves, but will take 1.2x damage to Psychic, Fighting, and Poison.
A Fire type mon will get a 1.5x boost in Fire moves, but will take 1.5 damage to Water.
Original type compatibility be damned. No type is superior, no type is inferior.

Skuntank should get an evolution that transforms its tail into a cannon and give it Mega Launcher, and transform it into a special attacker with 125-150 base SpA. Too bad cross gen evolutions will never happen again.

What an exquisitely shitty concept, 10/10, but an "ugly" Pokemon that uses passive hypnosis to trick others into thinking it's beautiful is a legitimately, insanely good idea. It could appear in its beautiful forme in most media (pokedex, magazines, official artwork, etc.) but its true colors can be seen by using certain moves like foresight on it or something. That could be its gimmick.

That's halfway clever. It's a filtration organ, so it should either resist or be super weak to poison, either is valid.
I don't see the logic of the Peacock evo. I get that they both have the poison resistance concept, one a filtration organ and the other a bird known for killing snakes or something, but they should be separate species.Consider Steel typing for the peacock pokemon.
