Instead of jumping on conclusions, let's look at this logically.
First, the basis of your statement. The only reason to think Sun would never appear is because it hasn't happened yet. That's not a bad reason, but not a good one either. And even that is untrue. It has happened, with Red. And you acknowledged that.
You claimed no other protagonist has appeared, thus no one will. But you can also say of course they appear. It didn't make sense for them to. They're the Champions of their respective regions, and it doesn't make sense to see them outside that region, instead of just defending their position, staying with their family. So of course they didn't appear, it doesn't make sense for them to. The only time it made sense for a protagonist to appear was in HGSS, when you visited a region again with a new protagonist, so it made sense seeing the prior Champion and player character there.
And there are many ways around it. Ways to let Sun/Moon appear with affecting the canonicity. For example, they can have both protags appear. Or they can give the choice to player, ask a question like "Do you know who Alola's first Champion was?", giving the choices between "a young, strong boy" or "a young, strong girl", and they don't have to bother with canonicity again.
And you don't even need them appear to let them meet Lillie again. They can reference it. All they need is a single line saying "Lillie was traveling with someone", and they're done.
Finally, this type of decision depends on the director. When Tajiri was directing, he made Red appear. When Masuda took the reigns, he killed that idea and no other protagonist appeared. With Ohmori, we don't know how it will go. He might just have them appear. He's a lot more focused on the story than Masuda ever was. He even made an actually non-canon character, Burnet, appear. He even had a previous "rival", Wally appear. So it could go any way. It's too early to decide whether Lillie will see Sun again or not.
