Grass Electric would've made it much more suceptible to grass' weaknesses (obviously) making it far harder for Xurkitree to pull off a sweep with its 83 speed while worrying about Ice, Fire, Bug, Poison all at once.

Only having to look out for ground is arguably easier because Xurkitree can ride it out with air balloon or try and tank it with a Berry if it's EVd well in its defensive stats or, the threat can often be elimated due to most ground types being slow enough to be KOed by energy ball (execept garchomp)

Finally with Xurkitrees sky high attack and boosting ability the extra STAB wouldn't even be worth it because either landing a tail glow or a KO would boost the move to STAB levels of damage or above anyway.
