The only good thing about Johto are the atmosphere and aesthetics of GSC, which are so good it makes it by far the best game in the series, which HGSS actively goes out of the way to ruin. Unlike RSE which had shit atmosphere and looked like crap to begin with so ORAS was only an improvement there, although then you have the issue of RSE actually being a decent game and ORAS ruining that.

So much has changed over the years, whether it's the aesthetics from upgrading to newer consoles or how different the battle mechanics have become, that it makes the original games still feel very distinguishable from their remakes. These aren't just touchups or HD editions, they're completely different games that just so happen to take place in the same regions.
Being a Gameboy game does define GSC to a certain point, and making a remake of it for the DS is going to compromise that.

I think the game is just ugly. For example, look at pic related. ORAS tried to emulate the "layered" technique that the original games used for the illusion of raised ground, but it looks very poor. A lot of 2D games cleverly used this technique, but it's not necessary in a 3D environment and as a result it looks terrible. What they should have done was just model the landscapes from the ground up, like they did later in SM. Another similar nitpick is how they didn't change the ponds that had square, 90 degree angles and such. Again, this would be fine for a 15 year old GBA game, but it's not acceptable for a modern 3DS game.
Also the game was way too easy. Everything just felt lazy in general.

It definitely has a different feel to it, but I enjoy playing the remakes more, they're more convenient, have a difficulty that the originals lack (to a certain extent, Pokemon has never been very difficult) and feel like they're the more complete experience.

I'm with you OP. Graphically speaking I think they achieved perfection with the original Gold/Silver/Crystal release. I tried my best to enjoy Ruby/Saphire/Emerald and beyond but they arent nearly as charming and the music will never beat the harsh chiptune.

Each games has its own atmosphere:

Silver has the 8-bits graphics and the sound effects that the GB Musics can't change, and no Physical/Special split that makes some Pokémon more useful than in SoulSilver. Also no Battle Tower makes the game pretty boring after beating Red. (If you play the game in a PC you can download the N-Rage input to make Pokémon Stadium 2 read your save state and play with your team).

SoulSilver has Pokémon from Gen 3 and 4 included so you have more options for your team, the Physical/Special split makes some Pokémon different from Silver, Battle Frontier and Pokéathlon adds more post-game after defeating Red, rematching Gym Leaders and Pokémon League also adds more options for grinding levels.
