Just back in gen 3 when Metagross learned Meteor Mash at 55 but Metang did at 50. Now that move relearner teaches you future moves and with player battles and facilities modifying your mon's levels automatically, I don't think there's much point unless it is some weird ass mon during your playthrough.

You get 20% more exp for being past the level of evolution. Useful if you're grinding something to 100

Different pokemon have different IVs, also EVs. Regardless if you evolved them after their level where it was supposed to evolve, it will still be the same.

The things that determine your Pokemon's stats at any given point in time are: IVs, EVs, Base Stats, and Level. Base Stats immediately update when you evolve, EVs are gained regardless of stage, IVs are (almost) static, and Level works the same regardless of whether you're evolved or not.

For what purpose

If you had a Salamence in RSE and had spent your Dragon Claw TM on something else. You had to wait till LEVEL 71 to get it by level up. I wanted DC on my Sceptile, so I postponed my Bagon's evolution till Lv. 49, when it learned it naturally.

Breloom.

Breloom can't learn Spore naturally. It can only have Spore if it learns it as Shroomsh at level 40. Shroomish evolves at 23.
