What are the major differences between Pokémon FireRed/LeafGreen and Sun/Moon? I played every game up until those when I was younger and I want to play again. Should I replay or are any of the gameplay or qol changes in Sun/Moon worth leaving my comfort zone of nostalgia and familiarity?

Sun Moon are great games for beginners. Not much has changed battle-wise aside from telling you which moves are super effective, and the addition of Fairy type changed a bit, but that's not hard to learn. The only issue is it's super hand holdy, and it lacks a Postgame. Since you say you played up to FRLG, you probably already know how Pokemon works, and may get bored with it. Still a pretty great game over all aside from that.
/Vp/ seems to agree that Pokemon Platinum and Black/White 2 are the best ones. Maybe try out Sun Moon, then move on to Platinum and BW/BW2 if you still like it

Not saying they're not hard. It does get tougher by the end. It's just more accessable to newer/returning players.
It's not the toughest game in the series either, but it's in the tougher half of the series for sure
