Two "gimmicks" that I'd actually like are are having multiple abilities at once (many mons and abilities would need to be reworked though) and an in-depth system of inheritable traits for all species of mons, both aesthetic and functional to gameplay.
For example if you breed a female mon in the Field egg group with a male Field/Water 1 one the offspring will appear slightly different, with a more streamlined body shape or little gills or fins, and its list of possible abilities that it can "equip" will include skills like Swift Swim or Water Veil.
