Spain sounds interesting (fun fact: the localization of the 10th movie is based on spain).
-Celtic culture in the north (Galicia).
-Arab culture in the south (Granada etc...)
- Greek culture in the Levante.
-Romanian one in pretty much the rest.
-Deserts like Tabernas in Almeria.
-More castles than the rest of Europe (Castilla).

Well Spain is a good choice, but I think either Italy or Greece (prefering Italy) would be better because of their mythology. Rome empire together with the rome gods would be perfect story material and would also perfectly tie in with Sinnoh's "world creating" mythology which could lead to a remake.
