The nature of a pokemon isnt super meaningful in the main game, it only really starts to make a difference for competitive battling.

Honestly just catch one with a -SP A nature and youre fine.

You don't need to bother for the story. Just catch one you see.

Well that is my problem , atleast 10 + munchlaxes and none of them have a SP DEF nature ... LAX/Jolly is my closest ones

Yes. Get a Pokemon with Synchronize and the nature you want and put it at the start of your party and 50% of the Pokemon you encounter will have that nature.
