They won't, nor should they. Remember, this is a kids game, and kids need to be able to beat it. Type theming is something that kids can understand and learn how to respond to. Get more opaque than that, and you'll have kids turning off the game in frustration. It might get a bit repetitive to you and me, but we're not the primary concern here. The series can't survive on veteran fans alone, it needs to find and retain new ones.
More complex and challenging themes should be saved for post-game, where people like us can enjoy them, but they won't block progress for younger players

Tierno was kinda like that, being a "Dance trainer"
Here are a few of my ideas:
-Trainer with all Levitate pokemon. He's a guru who levitates while in the lotus position.
-Fat guy who collects waifu-mon thinking owning Lopunnies and Liligants will impress the ladies and make him look suave.
-Psychotic cute girl who collects huge monstrous badass things like Aggron and Gyarados... and a Mawile. Because the team is like her, cute on one side, monster on the other.
-Gambler on Victory Road who uses moves with random power like Magnitude and Psywave, maybe put a guy or two on his team with OHKO moves (if you're at a higher level than him you don't have to worry about those...) Put something with Moody on there too.
-Trainer obsessed with speed. If your pokemon outspeed his he will use X-Speeds until his guys are faster. Uses naturally fast stuff like Ninjask, Accelgor and Jolteon.

Pawniard and Bisharp aren't chess at all.
Pawniard Japanese name makes a reference to Shogi, a chess like fame, but bisharp name is a pun on "to cut twice" and his armor is that one of a bandit lord a corrupted version of the feudal samurai armor using a command crest.
There are absolutely no ties to chess other than the English name.
