in this case it would be justified a ''just get's bigger'', since there's no thematic for eevee other than ''it adapts to it's environment''.
it would probably look something like cinccino minccino, so i guess the picture on the right is right.
or you could make it's fur act like a chameleon and change color based on it's environment

Take small design aspects from all of the other Eeveelutions and combined into one pokemon using Eevee as the base. Don't go overboard with the eeveelution design aspects, keep it underplayed.

Also, give it a wide variety of moves reflecting all of the other Eeveelutions and increase its stats by about 40 each over Eevee's, and you're good to go.

if you've been grinding that far without evolving it chances are that's pretty much what you've earned anyway, and Eevee has a great, simple look to begin with so another bigger one isn't that bad
