My Salamence has like 100 EVs on all stats but special attack and works fine.

Yes

EV training is mandatory if you pretend to get the gold symbols. For silver I'd say not so much, just use good pokemon. But for gold streaks you're going to need your pokemon to perform their best because every little point makes the difference. Not so sure about IVs, but ideally you don't want shit IVs either.

I had to train at least 9 mons. Don't remember their natures but they were all level 50 and I pumped them all up with calciums, proteins, and the like. And I don't remember all their movesets
